Organic Winery Paul Clauss

We have been growing organic vines on the former Weil estate in Ostfildern since 2019.

After three years of conversion, we harvested our first organic grapes in 2022 and will be selling our first organic wines this year.

At the Berlin Wine Trophy 2023 and the Asia Wine Trophy 2023, all of our organic wines were awarded a gold medal.

    Our organic wines

    • Paul Clauss 2023 White wine

      2023 White wine "R" dry


      The eponymous "R" stands for Riesling, as the wine is made exclusively from Riesling grapes.

      On the nose, the wine is characterised by aromas of green apple, citrus and peach. The body is characterised by its fresh acidity and lightness.

      2023 Rosé dry


      The wine is reminiscent of notes of strawberry and raspberry.

      Its slender yet individual style makes it an ideal summer wine.

    • Paul Clauss 2023 White wine

      2023 White wine "R" off-dry


      The eponymous "R" stands for Riesling, as the wine is made exclusively from Riesling grapes.

      On the nose, the wine is characterised by floral notes and aromas of ripe apple. The body is very balanced due to the wine's slight sweetness.

      2023 Muskattrollinger Rosé


      With a decent sweetness combined with a slender style, the Muskat-Trollinger presents itself as a harmonious wine and is the ideal companion for summer evenings.

    • Paul Clauss 2022 Red wine

      2022 Red wine "S"


      This wine was made exclusively from Pinot Noir grapes. It was classically fermented on the skins and then aged for 9 months in barriques.

      The wine has notes of cherry, blackberry and, thanks to its 18 months of ageing in barrique barrels, balanced wood flavours; the tannins are well integrated and the interplay of sweetness and acidity make it an ideal accompaniment to food.

      Organic sparkling wine rosé


      This rosé sparkling wine is made from Pinot Noir grapes.

      Refreshing fruity flavours blend lively with the soft tannins of the red wine grape. A sparkling wine with personality and a long finish.

      Riesling Sekt Brut


      Crisp and lively with fresh aromas of apple, citrus, and peach. Subtle yeast notes add complexity, while the lively acidity provides a refreshing backbone. A delicate sweetness on the finish balances the wine’s vibrant character, making it an elegant and well-rounded German sparkling wine.

      This dry sparkling wine charms with Muskat aromas, offering a fruity and vibrant effervescence.

      Organic Pinot Noir grape juice


      Our grape juice is pressed from organically grown Pinot Noir grapes. It is best enjoyed as a spritzer with sour sparkling water.

      A dry, spontaneously fermented Riesling white wine that impresses with delicate floral notes, subtle aromas, a full body, and a long, elegant finish.

    About me

    Paul Clauss


    I completed my bachelor's degree at the Weincampus Neustadt. In 2021, I completed my dual study programme in viticulture and oenology as the best in my year. In addition to the bachelor's degree, the programme also included an apprenticeship as a journeyman winemaker, which I also completed.

    During my training, I worked at various wineries in Germany. These included Jan Eymal's VDP Pfeffingen winery in Bad Dürkheim, Palatinate, which specialises in fruity, mineral Rieslings.

    Another winery was the Thuringian winery Bad Sulza of Andreas Clauß in Bad Sulza, which is considered a pioneer in Thuringian viticulture.

    My last training programme was at Rainer Schnaitmann's VDP Schnaitmann winery in Fellbach, Württemberg, which specialises in organic viticulture and the production of red wines.
